Mother's Day is just around the corner, a day where we celebrate the special women in our lives, be she a Mother, Grandmother, Sister, Daughter, Friend, or just a woman who has had an impact on us, it is a day we can thank them for all they have done.
My friends at Bays® English Muffins asked me to share some ideas for surprising the special Mom in your life with Breakfast in Bed, or at a great brunch if she isn't a morning person. From simply toasting the muffins with her favorite spread or using them as the base for a special recipe that she is sure to enjoy and appreciate, just remember that on Mother's Day you do the cooking and the dishes. Bays Classic French Toast:
-4 Bays Original English Muffins, split
- 3/4 cup milk
- 3 large eggs
- 1 tablespoon sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon ground cinnamon
- 1-2 tablespoons butter
- Divided Confectioners’ sugar for serving
- Maple syrup for serving
Preheat the oven to 200°.
Place the English muffin halves in a baking pan just large enough to hold them in a single layer.
Beat the milk, eggs, sugar, vanilla extract and cinnamon in a medium bowl. Pour the mixture over the English muffins, turning to coat. Let stand 20 minutes, turning once.
Heat a large nonstick skillet or griddle over medium heat. Melt half of the butter and add 4 muffin halves. Cook until the bottoms are lightly golden, about 3-4 minutes. Turn the muffin halves over and cook until lightly golden, about 3-4 minutes longer. Transfer the French toast to an ovenproof pan and hold in the preheated oven. Repeat with remaining muffin halves and butter.
Lightly dust French toast with confectioners’ sugar and serve with warm maple syrup.

If you are a little more adventurous you can try one of the more advanced recipes that use Bays English Muffins like the Mattina Toscana Egg Sandwiches or the Lemon Berry Skillet French Toast which not only taste great but are a great way to impress Mom with your culinary skills.
Mattina Toscana Egg Sandwich:
- 4 Bays English Muffins
- 1 tablespoon extra-virgin olive oil
- 4 slices provolone cheese
- 4 large eggs
- 1/2 cup roasted red peppers, thinly sliced
- 4 slices prosciutto di Parma
Preheat oven to 375°.
Arrange English muffins split-side up on a baking sheet and lightly brush with olive oil. Place one slice of cheese on each muffin bottom half and toast in the oven for 7-9 minutes.
While muffin halves are toasting, fry eggs in a large sauté pan to the desired doneness, turning once. Remove muffins from the oven, and using a spatula, place one egg over the cheese. Evenly divide the roasted red peppers and place on top of the eggs, and then cover with a slice of prosciutto. Cover with muffin tops and serve immediately.
Serves 4
Lemon Berry Skillet French Toast:
- 4 Bays Original English Muffins, halved and split
- 4 large eggs
- 3/4 cup half-and-half
- 3/4 cup milk
- 1/4 cup sugar
- 1 teaspoon fresh lemon zest
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup pure maple syrup
- 1/3 cup blueberries
- 1/3 cup raspberries
- 1/3 cup blackberries
- Powdered sugar (optional)
Lemon curd Instructions: Spray the inside of a 12-inch oven-safe skillet (such as stainless steel or a well-seasoned cast iron pan) with cooking spray. Arrange muffin quarters snugly in skillet, cut sides down, and set aside.
Combine eggs, half-and-half, milk, sugar, vanilla extract, lemon zest and salt in a blender. Blend until thoroughly combined, and pour over muffins in skillet. Lightly press down on muffins with a spoon to help saturate with liquid. Let soak, refrigerated, at least 1 hour, flipping muffins once so both sides get soaked.
While muffins soak, prepare berry syrup by combining maple syrup and berries in a small saucepan over low heat. Stirring occasionally, heat until the mixture thickens, but some whole berries are still visible.
When ready to finish the French toast, preheat oven to 350°F. Cover the skillet with foil, and place in the oven for 25 minutes. Remove foil, and continue baking for another 25 minutes, until puffy and golden. Let stand about 10 minutes before serving. Lightly dust with powdered sugar, if desired. Serve with warm berry syrup and lemon curd.
